You're almost there... just 2 end-stop-like switches and bob is your uncle. :-)

Pity you wouldn't be able to regulate the push/pull forces of the springs.
If you'd consider using some threaded rod (M16?) instead of steel tube, you'll be able then adjust the tensions with extra nuts and washers.

After 2 years ago of my first own pedals, I'm making the new version... "pedals v2" :p
I used the first one from january of 2015 and now it's time for this new model.
I took this proyect from internet but only images like this:

So here I'll post some images
Each pedal is independent and is mounted on a base, I started with the clutch


I used an square pipe (50 x 30 mm)


this piece form a sort of hinge with the one already welded in the pipe


the small hose will be used as a guide

each pedal use a spring like this one


this rod center the spring and gives the possibility to adjust its hardness

and there's the clutch!

I did the same for the throttle


The brake is a bit different (60 x 30 mm)

Hardness increases gradually (like real brakes)

These screws are to adjust the position of each pedal side by side

and comparing the old v1 with the new v2... (weight -> v1 +-5 kg, v2 15 kg )

Now I need to add the electronic parts. I wanted to use hall sensors but in my small city I can't found, so I guess I'll use potentiometers...

Next week if I add this I'll upload some pics and yes, after it gets finished, some black and yellow paint will be great

Could use some sound dampening though. Some felt cloth or rubber padding under the washers and dab of oil here and there :-)

How about opto-coupler as a hall sensor replacement?
You just put a LED on the one side, photo transistor/diode/resistor on the other and the gap (elongated triangle shaped) between them, moving with the pedal.

How much does this thing weigh? Looks hefty

Yes! the throttle pedal need some oil and I'll add something on the hose, maybe vaseline

Rather than oil or vaseline, try silicone lubricant. Silicone lubricant dries as a thin layer of low-friction silicone (would you guess?!) rather than just drying up, it's the same stuff you'd use to keep window runners on your car nice and smooth for example. About the same price as a bottle of WD40 really from any auto/DIY store.

Energy, you are an engineering genius - that's brilliant. They look like they'll last at least 50 years or more

As an alternative to Silicon or other types of grease, you could try graphite dust as a lubricant. It's completely dry, so it doesn't collect dust and dirt. Use a fine sandpaper to grind the lead of a pencil down and sprinkle the dust wherever needed.

Annnnnnd... finally I got the time to finish the new pedals
I used potentiometers to get it working... and some black and red paint because I haven't yellow e.e
